MADELEINES MATCHA/GLASEADO LIMON

MATCHA PHILOSOPHY

Para 35-40 unidades - Preparación 15 min

Para las madeleines/

  • Harina 130g

  • Polvo hornear 1 cda

  • Té matcha en polvo (usar variedad para pastelería, ya que hay muchas marcas y precios) 2 cdas

  • Azúcar rubia 100g

  • Huevos 3 grandes

  • Manteca salada 130 g

  • Zest de 1 limon

Para el glaseado/

  • Jugo de 1 limón

  • 170 g de azúcar impalpable

Procedimiento/ 

Precalentar el horno a 200° c. En una sartén derretir la manteca a punto avellana, retirar del fuego inmediatamente. En un bowl mezclar los ingredientes secos, agregar el las yemas de huevo. Montar apenas las claras con un tenedor e incorporar a la mezcla. Agregar la manteca derretida y mezclar bien hasta incorporar todos los ingredientes. Agregar el zest de limón. Llenar los alvéolos de un molde de madeleines, repetir la operación 2 o 3 veces. Hornear 6 min a 200° c y luego bajar la temperatura a 180° c y cocinar 4 min más.

Armado/

Glaseado de limón/ Exprimir el jugo de 1 limón en un recipiente , ir agregando el azúcar impalpable de a poco, siempre revolviendo. Agregar hasta obtener la consistencia deseada, más o menos espesa. Glasear las madeleines sobre una rejilla, ya que el excedente de glaseado va a caer por los costados. Dejar que el glaseado se seque durante al menos una hora. Conservar las madeleines en un tupper hermético.
